parma! vegan artichoke dip - all vegan healthy

Vegan Artichoke Green Chile Dip

This is a BIG potluck hit!

Ingredients

1 cup mayo
1 can artichoke hearts in water
1 can chopped green chilies
1 cup (one small bottle) Better Than Bacon Parma! (or whatever Parma! you have on hand)
1 can chopped olives (optional)
1 or 2 garlic cloves, smashed and minced
Salt and pepper to taste

Optional: big handful of steamed spinach, chopped and mixed in.

Directions

It is not necessary to cook this, but if you want to heat it up and brown it…..preheat oven to 350 degrees. 

  • Drain and chop artichoke hearts. 
  • Mix everything together.
  • Put into serving dish and enjoy.
  • Or put into a baking dish and bake 20 minutes or until just brown. Don’t overcook. 
  • Enjoy with crackers, pita, veggies, or dipper of your choice.
