Chicken Parmesan Reimagined

If you are craving something creamy and delicious, wait no longer! This will satisfy you and your loved ones craving for chick’n parmesan.


  • Spaghetti or pasta of choice
  • ½ Sweet onion, chopped
  • 4-6 Mushrooms, chopped
  • Handful of kale, chopped
  • Handful of chard, chopped
  • Asparagus, cut small
  • Anything else in your fridge that needs to be eaten.
  • 1 pack Plant-Based Chick’n (Tofurky’s)
  • ¾ cup vegan mozzarella
  • ¾ cup marinara sauce
  • ¾ cup Parma!
  • Nama shoyu to taste


  1. In a large pot, sauté the chopped onion and mushroom.

  2. After 5 to 10 minutes, add the rest of the veggies.

  3. Put a lid on it and let it cook slowly for 5 to 8 minutes

  4. In a separate pan lightly sauteed the Chick’n to heat it up

  5. While the Chick’n is heating up, add to the veggies: marinara sauce, mozzarella and Parma! Stir well.

  6. After a minute or two add the Chick’n and stir again.

  7. Get out your favorite bowl, dish it up, thank the universe for this food that is going to nourish and heal you, enjoy.

Top with Parma! vegan parmesan, and parsley as garnish. Enjoy!
