Ingredients:
- 2 tablespoons oil of choice
- 1 yellow onion, chopped
- 2 cloves garlic, crushed
- 4 medium zucchini or other summer squash, sliced
- handful of greens of choice, cleaned and chopped
- 1/4 cup vegetable stock
- 2 to 3 TBL nama shoyu, aminos or soy sauce
- 1/2 teaspoon chopped fresh oregano
- Heat oil in a large skillet over medium-high heat.
- Add onion and garlic and cook until just softened, about 4 minutes.
- Add squash and greens and stir-fry until they begin to soften, about 2 minutes.
- Stir in stock, nama shoyu and oregano and simmer gently until liquid has almost evaporated, about 2 minutes.
- Top with Parma! and parsley for serving.
