Summer Squash Stir-Fry


  • 2 tablespoons oil of choice
  • 1 yellow onion, chopped
  • 2 cloves garlic, crushed
  • 4 medium zucchini or other summer squash, sliced
  • handful of greens of choice, cleaned and chopped
  • 1/4 cup vegetable stock
  • 2 to 3 TBL nama shoyu, aminos or soy sauce
  • 1/2 teaspoon chopped fresh oregano
  1. Heat oil in a large skillet over medium-high heat.
  2. Add onion and garlic and cook until just softened, about 4 minutes. 
  3. Add squash and greens and stir-fry until they begin to soften, about 2 minutes.
  4. Stir in stock, nama shoyu and oregano and simmer gently until liquid has almost evaporated, about 2 minutes.
  5. Top with Parma! and parsley for serving.
