How did I just discover this? Wow, who knew? Mexican street corn is the bomb!
This vegan version is going to put a smile on your face.
- 2-5 T. Parma! – Chipotle Cayenne or Jalapeno Bacon, or a combination of both
- 2-4 Ears corn
- 1/3 C. Vegan mayonnaise (I like Follow Your Heart)
- 1 or 2 2 Cloves garlic, crushed and chopped
- 1 T. Lime juice
- Pinch salt
- 2 T. Chopped Cilantro
In a bowl, stir together the mayo, Parma!, garlic, lime juice and optional pinch of salt until smooth. Add more Parma! to taste.
Place shucked corn in a pot of boiling water and boil on low for 8-10 minutes. Or if you want to grill it, place the corn on a medium-high grill, or grill pan and cook on all sides until the corn is cooked and has grill marks, about 4 minutes per side.
Spread the corn with Parma! sauce, sprinkle with more Parma! and cilantro and enjoy!
