A yummy back to school lunch idea that is refreshing and satisfying, tortilla rollups with Parma!
Prep time 15 minutes. Serves 6-8 tortillas
Ingredients
- Your favorite cream cheese or 1 recipe dairy-free veggie cream cheese
- 2 TBL Parma! of choice
- 1 bell pepper cut into thin strips
- 2 carrots – halved and cut into thin strips
- 3 radishes – halved and cut into thin slices
- 1 small cucumber – halved and cut into thin strips
- several handfuls arugula or spinach or chopped lettuce of choice
- 8 tortillas
Instructions
- Lay a tortilla flat on a large plate or cutting board. I like EZEKIEL’s sprouted.
- Spread about 3 tbsp of cream cheese on the tortilla.
- Place 3-4 pepper slices, 3-4 carrot slices, 4 radish slices, 3-4 cucumber slices and a sprinkling of green leaves on top of the cream cheese spread.
- Sprinkle Parma! across top evenly
- Roll up the tortilla as tight as possible.
- Using a serrated knife, cut tortilla rollups with Parma! into equal bite size pieces.
