Tortilla Rollups with Parma! and Dairy-Free Veggie Cream Cheese

A yummy back to school lunch idea that is refreshing and satisfying, tortilla rollups with Parma!

Prep time 15 minutes. Serves 6-8 tortillas


  • Your favorite cream cheese or 1 recipe dairy-free veggie cream cheese
  • 2 TBL Parma! of choice
  • 1 bell pepper cut into thin strips
  • 2 carrots – halved and cut into thin strips
  • 3 radishes – halved and cut into thin slices
  • 1 small cucumber – halved and cut into thin strips
  • several handfuls arugula or spinach or chopped lettuce of choice
  • 8 tortillas


  • Lay a tortilla flat on a large plate or cutting board. I like EZEKIEL’s sprouted.
  • Spread about 3 tbsp of  cream cheese on the tortilla.
  • Place 3-4 pepper slices, 3-4 carrot slices, 4 radish slices, 3-4 cucumber slices and a sprinkling of green leaves on top of the cream cheese spread.
  • Sprinkle Parma! across top evenly
  • Roll up the tortilla as tight as possible.
  • Using a serrated knife, cut tortilla rollups with Parma! into equal bite size pieces.
